Because so many of you asked, here’s my stuffing recipe from last year!! This Lentil Holiday Stuffing is the perfect side dish for any celebration this fall & winter. So freaking crispy on the outside, and bursting with flavor in every bite!
1. Rinse lentils in cold water, then let them cook in a sauce pan with 1½ cups of vegetable broth or water over medium-high heat. Once boiling, lower it to a simmer and continue cooking uncovered for 20-30 minutes, then set aside.
2. Preheat oven to 350°F (176°C).
3. Dice celery and onion, then sauté with a little olive oil. Add a dash of salt or pepper for taste. Cook until translucent (for about 5 minutes), then set aside.
4. Tear up your whole-grain bread, then pour the vegetable broth on top. Add celery, onion, lentils, flax egg (combine water and flax seed) and sage to the bowl and mix it all up!
5. Transfer to a pan (I used a little avocado oil so it doesn’t stick!) and bake for about 45 minutes or until your dish is browned and crisp.
6. Let it cool slightly before serving and enjoy!
