Carrot cake is one of my faaaaves, and this recipe is so filling + delicious, it’s bound to be a crowd-pleaser at any spring celebration! 🐇🥕 Best part? It’s full of ingredients you probably already have on hand!
1. Preheat oven to 350°F.
2. Make flax eggs in a large bowl by mixing flax and water, then set aside.
3. Whisk in oil and maple syrup, then add in cashew milk pulp, sugar, salt, baking soda, baking powder, and cinnamon.
4. Add in 3/4 cup of plant milk, then all of the carrot and apple pulp, followed by almond flour and gluten-free flour blend. Then, stir in the walnuts + raisins.
5. Pour into a 9×13-inch baking dish (or pan of your choice) and bake for 40-50 minutes.
6. Let rest and cool thoroughly. While your cake cools, whip up the cream cheese frosting.
7. Once cooled, top with frosting, serve, and enjoy.
