Best Game Day Nachos

1. Blend up your favorite beans (I’m using black beans, because of their high antioxidant power and I love their vibrant color), add a little olive oil, and throw them in a pan to make ‘em refried.
2. Grab all of your fix-ins.
3. Start layering! In a large glass baking dish, add chips, a hearty layer of refried beans, chopped chick’n, and shredded “cheese”.
4. Bake in the oven at 500°F for 10-15 minutes.
5. Prep the salsa. Dice red onion, tomatoes, and cilantro. Add a generous squeeze of lemon or lime.
6. Remove your nachos from the oven, add a little sour cream, drizzle on the salsa, and throw in some diced avo!
7. Top it off with pepitas for a little extra crunch, zinc, omega-3s, and iron.
8. Enjoy!
